Established in 1977, Trudy's originally opened its first location, Trudy’s Texas Star, just west of the University of Texas. The restaurant quickly made a name for itself in Austin as a staple Tex-Mex eatery known for its enchiladas and Mexican martinis. The company opened two more restaurants in 1983 and 1986 which were combined into one location in 1994 and later moved to its current location on Little Texas Lane, known as Trudy’s South Star.
